Our talented Bethany crafters have been hard at work creating unique handmade treasures, including Christmas ornaments, handcrafted wooden pieces, handmade doll clothes, and more. You’ll also find tables filled with homemade desserts, frozen and refrigerated casseroles, and beloved favorites like June’s Chicken Salad, homemade pimento cheese, and sandwich-style chicken salad—all available in bulk.

Our Bethany Gift & Gourmet Market needs plenty of homemade casseroles each day! Whether you make one of our Bethany Favorites or share a beloved family recipe, your delicious contribution will help make the Market a success.

Casserole Preparation Guidelines
To help us package and sell casseroles safely and consistently, please follow these guidelines:

  • Casseroles must be 8×8 inches. Please do not make larger sizes.
  • Casseroles may be freshly made or frozen.
  • Place casseroles in disposable 8×8-inch aluminum containers.
  • Wrap casseroles tightly in cellophane or foil. Please do not use plastic lids.
  • Place each wrapped casserole in a gallon-size zipper plastic bag.
  • Quiches should be made in disposable 9-inch pie plates, wrapped tightly in cellophane or foil, and placed in a gallon-size zipper plastic bag.
  • Family Favorites must include a copy of the recipe with your name.

Bethany Favorite Recipes

We need many Bethany Favorites casseroles to keep a ready supply on hand. Please consider making one of our favorite recipes—Cozy Chicken Bake, Italian Pasta Casserole, or Sausage Quiche—to help keep our freezer stocked during the Market.

Cozy Chicken Bake
(makes 2 8×8 pans)

  • 3 Cups Chicken (cooked & shredded)
  • 4 cups cooked long-grain rice (use 1 1/2 cups uncooked rice to make 4 cups)
  • 1 family style can cream of chicken soup
  • ½ tsp. Onion Powder
  • 1/8 tsp. Garlic Powder
  • Salt & Pepper to taste
  • 1 ½ cups cheddar cheese, shredded

Preheat oven to 350. In large bowl mix cooked chicken, cooked rice, cream of chicken soup, onion powder, garlic powder, salt, pepper and 1 cup shredded cheddar cheese. Add to casserole dish. Top with remaining cheese. DO NOT BAKE. Cover and freeze or refrigerate.

Italian Pasta Bake
(makes 2 8×8 pans)

  • 1 lb. ziti noodles
  • 1 ½ lbs. ground Italian sausage
  • 4 cloves garlic, minced
  • 28 oz. can crushed tomatoes
  • 1 tsp. salt
  • 8 oz. shredded mozzarella cheese
  • ¼ tsp. crushed red pepper flakes
  • 1 cup heavy cream
  • 1/3 cup plus 3 tbsp. grated pecorino Romano or Parmigiano Reggiana cheese, divided
  •  1/3 cup chopped fresh basil
  • 1 ½ tsp sugar

Cook ziti noodles according to package for al dente (about 7 minutes). Drain and add pasta back to pot. Heat large sauté pan over medium-high heat. Crumble sausage into pan and cook, breaking apart
with a wooden spoon, until lightly browned and just cooked through (5-6 minutes). Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tbsp of fat from the pan and set over low heat. Add the garlic and cook, stirring constantly, until soft but
not browned (about 1 minute). Add the crushed tomatoes, salt, sugar, and red pepper flakes. Simmer uncovered for 10 minutes.

Add the cream, 1/3 cup of Romano, sausage and basil to pan. Stir until combined. Spoon half mixture in baking dish, sprinkle with half of mozzarella and half of the remaining Romano. Spoon remaining past mixture on top and sprinkle with remaining cheese. DO NOT BAKE. Cover tightly and freeze or refrigerate.

Breakfast Sausage Quiche
(makes 2 pies)

  • 2 regular pie crusts
  • 1 lb. hot sausage  thoroughly cooked and crumbled.
  • 2 cups shredded sharp cheddar cheese
  • 1 small yellow onion diced
  • 6 eggs
  • 1  cup half & half
  • 1/2 teaspoon ground mustard
  • salt and pepper to taste

Preheat oven to 350°. Mix the cheese, onion and cooked sausage in a mixing bowl and then put half into each pie crust. Mix the eggs and half & half in a bowl with seasonings, and pour half of egg mixture over toppings in each pie crust. Bake for 30 minutes.

Baked Goods

We will be selling whole desserts that people can take home to enjoy for dinner, tailgating or freeze for your holiday parties AND sliced desserts that you can enjoy as a snack.

We are asking for:

  • Heirloom multilayered cakes like Chocolate, Red Velvet, Carrot, Coconut and Hummingbird, etc.
  • Other wow cakes such as Cheesecakes and Texas Sheets cakes.
  • Pies such as Fruit, Peanut Butter, Coconut, Chocolate, Lemon Meringue and Toll House are always winners.
  • Bakery items such as fresh baked Breads, Muffins, Biscuits, Scones, Bagels and Rolls. Anything you would find in a bakery.
  • Snack, party or tailgating items such as Cheese Straws, Gourmet Brownies, Bars, Cupcakes, Candies, Party-mixes, and Cookies.
  • Sugar free and Gluten free items are also needed.
  • Deliver in a disposable container

Please include a copy of the recipe with your name on it.

The Bethany Gift & Gourmet Market needs volunteers to make delicious casseroles and baked goods, as well as volunteers to help in the Market during open hours. Whether you can bake, cook, greet shoppers, stock tables, or lend a helping hand, we’d love to have you join us!
